Ingredients You'll Need

To prepare this festive chili tamale casserole, gather the following ingredients:

  • 3 cups of Edmond's Chile (1lb roll yields 3 cups)

  • 12 Jumbo Tamales (2 Family packs, each containing 6 tamales)

  • 1 cup of shredded cheese (cheddar or Mexican blend)

  • Optional toppings: sour cream, sliced jalapeños, chopped cilantro, beans or rice

Preparing the Casserole

Step 1: Preheat Your Oven

Start by preheating your oven to 350°F (175°C).

Step 2: Layer the Ingredients

In a greased 9x13 inch baking dish, begin layering your ingredients.

  1. Pour 1.5 cups of Edmond's Chile on the bottom of the baking dish.

  2. Take the tamales (thawed) out of their wrappers and arrange the tamales in a single layer over the chili.

  3. Spread the remaining chili evenly over the tamales, fully covering the tamales.

Step 3: Add Toppings

Generously cover the casserole with cheese

Baking the Casserole

Step 5: Bake

Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

Step 6: Let It Rest

After baking, take the casserole out of the oven and allow it to rest for about 10 minutes. This resting period helps the layers set and makes for easier serving.

Serving Suggestions

  • Customize Your Casserole: Feel free to personalize this recipe with your favorite ingredients. Consider adding 1 cup of corn, 1 diced bell pepper, or 2 tablespoons of jalapeños for an extra kick.

  • Optional Toppings: Feel free to top with crispy tortilla chips, or guac. For a creamy texture add sour cream or even plain Greek yogurt (my favorite).

  • Leftovers: Any leftovers can be stored in an airtight container in the refrigerator. They can be reheated in the microwave or oven, making for a quick and delicious meal later.
